docs(genbi): drop the removed bound-mode launch contract from the README

The launch gate's --mode/--project flags and the BFF's WREN_HARNESS_PROJECT
env var were already removed from the code; the README still documented
both as a live dual-mode contract. The gate now has a single boot mode
(bootstrap) and an existing project is adopted through the running app,
not via a boot-time flag.
