之前的 bde1dcd9 在 dialer_integration_test.go 给 TestJA3Fingerprint +
TestAllProfiles/default_node_v24 的 Profile 加了显式 Extensions 锁定 plain
变体，但漏了 dialer_capture_test.go 的 TestDialerAgainstCaptureServer/
default_profile — CI 上再次由 maybeEnrichExtensions 的 50% 概率翻车。
本次给同一位置加同样的 13-extension 显式列表 + WHY 注释指向
dialer_integration_test.go 的完整说明，避免重复文档。
