orcasjh 3ad893ecf6 feat: add OrcaRouter as a named LLM protocol ...

Add ORCA_ROUTER to the LlmProtocol provider registry, mirroring the
existing OpenAI entry (OrcaRouter is OpenAI-compatible). Also add the
ai_model_protocol dict item, update AiModelConfig docs and README.
