* fix(docker): forward every documented env var to the container docker/docker-compose.yml only forwarded a subset of the variables that docker/.env.example tells users to set, so the rest were silently inert. CHECKIN_CRON and BALANCE_REFRESH_CRON were additionally hardcoded, which overrode any user value. * docs(docker): declare the remaining supported env vars in the compose example
