Dannon Baker d053bfae0b Use the GalaxyAI name in the GTN/IWC refresh config and comments ...

The agent assistant was rebranded from ChatGXY to GalaxyAI, but this
branch's new config descriptions and code comments still said ChatGXY.
Swap them over and regenerate the sample yml + options rst from the
schema. The lowercase depot bucket path in gtn_database_url stays as-is
-- that's a real URL, not a brand reference.
